It is made from the skin of local oyadori [Literally “parent chicken”] and has become harder to find recently. This skin slowly simmered in a white miso paste and sake from Kure.

The softness of this long-enjoyed, easy-to-eat delicacy is achieved by allowing the slight sweetness of the white miso to soak into the skin of the oyadori.
Give it a try–the seasoning of this dish varies by restaurant.
